Recipes – Chilli Jam

Ingredients: 

  • 10 fresh red chilli, coarsely chopped                                                     
  • 5 fresh green chilli, coarsely chopped
  • 5 fresh small chilli, coarsely copped
  • 6 garlic cloves, halved
  • 3 gm dry ginger
  • 1 can of tomato (425 gm)
  • 200 gm caster sugar
  • 60 ml red wine 
  • 60 ml balsam vinegar
  • 1 teaspoon sea sauce
  1. Using food processor or blender process the combined chilli, ginger and garlic until finely chopped. Transfer the mixture to a large saucepan with the tomato, sugar, vinegar, red wine, salt and bring to the boil. Reduce the heat and simmer, uncovered, stirring occasionally for 40 minutes.
  2. To test if the jam is ready, place a teaspoon of jam on a chilled saucer and place in the freezer for 1 minute. If it’s firm and set, the jam is ready.
