Ingredients:
- 10 fresh red chilli, coarsely chopped
- 5 fresh green chilli, coarsely chopped
- 5 fresh small chilli, coarsely copped
- 6 garlic cloves, halved
- 3 gm dry ginger
- 1 can of tomato (425 gm)
- 200 gm caster sugar
- 60 ml red wine
- 60 ml balsam vinegar
- 1 teaspoon sea sauce
- Using food processor or blender process the combined chilli, ginger and garlic until finely chopped. Transfer the mixture to a large saucepan with the tomato, sugar, vinegar, red wine, salt and bring to the boil. Reduce the heat and simmer, uncovered, stirring occasionally for 40 minutes.
- To test if the jam is ready, place a teaspoon of jam on a chilled saucer and place in the freezer for 1 minute. If it’s firm and set, the jam is ready.
